We're going to be a Nielsen Homescan family!

So, the other day I get an email asking for further information and confirmation that we will be Nielsen HomeScan Family! I'm pretty excited about it! I closely resemble that of a child waiting to open the first gift at Christmas. (which may or may not be on Christmas Eve and may or may not be PJ's EVERY year.)

Nonetheless, I have decided (and am working on) moving my blog over to WordPress and have already started working on product reviews and giveaways!

I foresee a lot of wonderful changes and an even bigger need to get a little more organized and efficient!

Will be moving over to WP shortly AND will let you know the progress of the Nielsen HomeScan project AND our first review and giveaway!

I am . . .

tired. Spent the last 5 or 6 nights on the living room floor with a sick little boy. He has a race car bed in his room and while I can manage to get crappy sleep in that too, I am, however, quite unable to get out of the bed once I'm in it. It's special. It's very similar I imagine to a fish flopping around on dry land. Not sure, just sayin'.

The other alternative is to have 3 of us in our bed and have a cranky husband in the morning, a cranky ME, and a child who got fairly good sleep between the two of us. Nah, that's not a good alternative either. Hubby is plenty cranky on his own with or without sleep.

So, the last resort is my beloved living room floor - at least we just got a new plush soft rug to sleep on. The little guy needs some snuggles and medicine through the night - it's honestly just easier this way so we avoid waking the whole house up.

Hopefully he can go back to school Monday (although I will admit, it's been pretty nice having him home with me again . . . )

Mini Maple Pancake Muffins

Mini chocolate chip pancake muffins

… with chocolate chips I might add. Ever get a taste for pancakes, but don’t feel like flipping?

I do. Especially since I always seem to be the one still flipping while everyone else gets to eat the first ones off the pan. If I had a bigger griddle, it would probably be ok. But I have a little one and usually end up frying one pancake at a time to make sure they look decent… which takes for ever.

But not this way. Try these laborless baked pancake muffins. Hmmmmmm… Puffins anyone?

Generously grease a 24 cup mini muffin pan with non-stick spray.

Mini Maple Chocolate Chip Pancake Muffins.
(Someone please come up with a shorter name for these.)

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2/3 cup buttermilk
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup milk chocolate chips

  • Preheat oven to 350 degrees.
  • Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.
  • In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.
  • Add wet ingredients to dry ingredients and stir with a spoon until combined.
  • Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.
  • Bake for 8-9 minutes.

Makes 24 mini pancake muffins.

Let cool slightly and remove from the pan. You may need to use a toothpick around the edges to separate the pancake muffins from the pan.
Serve immediately with warmed butter if you like or even just with maple syrup.

Using a small bowl to serve the syrup in makes it really convenient to coat the muffins in maple.

YES! Yes! I can't wait to see this . . .

on the big screen. But, for now, here is the trailer for the New Version of Fame! While I loved the old version and figure some things just aren't meant to be screwed with - I'm pretty happy with the new one - if it's as good as the trailer seems to be!

I am just trying to keep my head above water . . .




these days. Too many things to do and now that school is out I have a very bored 8 year old tossed in the mix! I have a baby shower I am planning for this Saturday, also getting things together for community VBS, still lovin' the new job, and trying to get my house back in order.
We successfully finished the quilt for the retiring couple for church. I will leave you with some photos and try to come back in the near future and post something earth-shattering for all 3 of you that follow my blog LOL . . .(OK there are probably more, but I digress it has been pretty lame lately and it wouldn't hurt my feelings if you've jumped ship . . . after all, I probably would have.)

Here's another doozie - and I love it!


Passive-Agressive notes from coworkers, landlords, school mates, just about anyone, and photos to go with.  They are literally, pee in your pants funny!  

Just in case you can't read that it says "DO NOT USE.  I spit in this since someone keeps using it.)  Thanks.  

The next line reads " I spit in it too, since your since a jerk!"

I remember one of the places I worked there was a gal who was always on a diet.  She always brought her own lunches and didn't always mark them.  There were several male coworkers that just grabbed what they thought was "their" food  and eat it!  (how can you not remember how or what your wrapped/put your food in?)  She went to the fridge to get her sandwich and one of the guys had eaten it!  Holy Cow!  I thought an all out war was going to break out and we were all going to have to duck and cover under the crappy orange office chairs.  

Nonetheless, these are certainly worth the reading!
